About Jérôme Jaegle
Jérôme Jaegle is the son and grandson of butchers from Kaysersberg — yet he runs one of France's most nature-forward, near-vegetarian Michelin-starred restaurants. He trained with Jean-Yves Schillinger (JY'S, Colmar) and Christian Têtedoie before opening Alchémille in 2015, earning his first Michelin star in 2017 and the Green Star in 2020. He won the Silver Medal at Bocuse d'Or France 2023. His permaculture gardens and orchards cultivate forgotten vegetable varieties; his team forages daily for wild herbs, flowers, and roots; and he collaborates with the last Rhine fisherman to preserve local heritage. His wife Marie-Laure manages the dining room. Gault & Millau rates the restaurant 17/20 (3 toques).
