Simposio is the MICHELIN-starred restaurant of chef Roger Julián, tucked into the small village of San Antonio de Benagéber, 15 kilometres outside Valencia. In an intimate space built around an open kitchen with a large central island, Julián practises a relentlessly market-driven cuisine: no fixed menu, daily changes according to what the field, the garden, and the sea have provided. Four tasting menus of different lengths offer access to Julián's zero-waste, hyper-seasonal cooking, which is built on 85% Valencian produce and a 100% Valencian wine list. Earning its first MICHELIN star in 2026, Simposio had already won TheFork's Outstanding New Opening award and was ranked No. 1 on TripAdvisor for its area.
