Fierro is the singular creative project of Argentine couple Carito Lourenço and Germán Carrizo — a MICHELIN-starred restaurant in Valencia's Ruzafa neighbourhood that weaves together Valencian produce, Argentine memory, and restless culinary invention. Born from a formative stretch at Quique Dacosta's three-star restaurant in Dénia, Lourenço and Carrizo built Fierro as a 'mutant' — no à la carte, only a single tasting menu that changes as often as the market allows. The one immutable exception is the empanadilla criolla, a flaky Argentine pastry that opens every meal as a tribute to family, roots, and the country they left behind. In 2025, Fierro celebrates its 10th anniversary with three menus honouring a decade of creative evolution.
