- Prawn, burnt mandarin and ginger ceviche — Served far soupier than ceviches normally are on these shores, and it’s all the better for it, a kaleidoscopic bowl that’s at turns sweet and tart, and simply incredibly good.
- Crab chilpachole rice — Astonishingly good: rich, throatily spiced and possessed of all the salty swagger of a sea dog on shore leave. A cool dollop of smoked-eel cream is an inspired touch.
- Cometa fried chicken — It’s not meant to be sophisticated. It’s meant to appeal to something deeply animal in all of us. I’d put it right up there with the very best available in the capital right now.
