Au Crocodile is Strasbourg's oldest fine-dining institution — an 1840 founding whose stuffed Nile crocodile still hangs above the bar. Émile Jung held 3 Michelin stars here for over two decades, making it one of France's great addresses of the 20th century. Under chef Romain Brillat, the house maintains its commitment to classic French grandeur with 1-star precision and one of France's most extraordinary wine cellars (65,000 bottles). - Riesling Grand Cru Kirchberg — Ribeauvillé (18) — Au Crocodile's wine programme is anchored in Alsace Grand Cru: Riesling from the Kirchberg de Ribeauvillé (one of the three Ribeauvillé Grand Crus, on a gneiss and schist slope with exceptional sun exposure producing wines of great aromatic richness and longevity). The Kirchberg Riesling is Brillat's preferred pairing for the quenelles de brochet and sole meunière — its mineral tension and citrus-floral character cutting through the butter sauces cleanly.
