Au Crocodile was one of France's great three-star institutions under Émile Jung, who held the Michelin stars there for decades. The name derives from a Nile crocodile brought back by a General fighting under Napoleon — stuffed and hung above the bar as a trophy, it became the restaurant's emblem.
