About Takaaki Tsuneyasu
Takaaki Tsuneyasu is from Okayama Prefecture and trained at several of Japan's most respected Japanese restaurants — Akasaka Kikunoi, Kanda in Motoazabu, and Hanawa in Paris — before founding Towa in Nishi-Azabu. His concept merges kaiseki structure with an unusual focus on premium wagyu beef, a departure from traditional kaiseki convention that earned the restaurant one Michelin star.
