About Shinji Kanesaka

Shinji Kanesaka trained as an apprentice at the prestigious Kyubey before opening his eponymous restaurant in 1998. He has since expanded to Palace Hotel Tokyo and international locations in Singapore and Hong Kong. Known for his rigorous training philosophy and traditional Edo-mae style, he received the 2025 Michelin Guide Mentor Chef Award for nurturing the next generation of sushi chefs.
