Flores Raras ('rare flowers') took over the space that housed El Poblet, Quique Dacosta's highly acclaimed Valencia outpost. Álvarez brings a Mexican-Valencian dialogue to one of Valencia's most watched tables — two cultures with deep agricultural richness, both shaped by indigenous produce and sun-drenched land.

Carolina Álvarez, born 1988 in Mexico, moved to Valencia with over six years of experience in top Spanish and international kitchens. At Flores Raras (formerly El Poblet, 2 Michelin stars since 2026), she creates a contemporary tasting menu that combines her Mexican heritage with the flavors of the Valencian huerta in bold, unconventional ways.
