About Toni Kostian
Grön (Swedish for 'green') reflects Kostian's plant-forward philosophy — a Nordic restaurant where vegetables and foraged ingredients take center stage. Inspired by his time at Maaemo in Oslo, Kostian returned to Helsinki with a vision of Finnish foraging culture expressed in the language of Nordic fine dining.
Toni Kostian is the chef-owner of Restaurant Grön in Helsinki, holding 1 Michelin star (since 2018) and 1 Green Star (since 2021) for sustainability. Finnish-Norwegian in heritage, Kostian trained in Oslo and Nordic kitchens before returning to Helsinki to open Grön — a restaurant built entirely around seasonal vegetables and Nordic foraging.
