Chef Hashiba's technical mastery is a testament to his extensive and revered training, having honed his skills for seven years at "Sushi Kanesaka" in Ginza and further refining them in a private room at the legendary "Sushi Saito" in Roppongi. His signature sushi rice, or shari, is a carefully orchestrated blend of new rice (sourced from changing production areas annually) and aged rice, seasoned exclusively with red vinegar and sun-dried salt.
