Chef Yamamoto trained in Kyoto's most prestigious kaiseki establishments, bringing the refined Kyo-kaiseki tradition to Tokyo with deep respect for seasonality and technique. He developed his craft under the mentorship of Yoshihiro Murata, working his way up through renowned establishments including Hyotei and Kikunoi Honten.
