Ryoma Shida honed his skills at renowned Tokyo institutions including three-Michelin-starred Ginza L'Osier and two-Michelin-starred ESqUISSE before opening l'élan. He represented Japan at the S.Pellegrino Young Chef 2015 competition in Milan.
