He works with what nature provides, rather than imposing external desires, evident in his use of ingredients such as Vaucluse asparagus, Sarrians pigeon, Nyons olive ice cream, Sisteron lamb, olives, bottarga, and aromatic herbs. This commitment extends to a deep-seated sustainability practice that permeates his kitchen's daily habits, including minimizing water waste, energy conservation (turning off lights and appliances), and composting organic waste, all aimed at protecting a fragile local ecosystem and valuing the origins of food.
