Yusuke Seguchi

Born in 1983 in Fukuoka Prefecture, Yusuke Seguchi spent ten years after high school honing his craft at Kougyoku in Nakasu — one of Hakata's most respected sushiya — before broadening his horizons at the five-star Hôtel Métropole in Monaco. He returned to Fukuoka in 2012 to take over Kiku Zushi, the family restaurant his father founded in 1988 in Kasuga City, transforming it from a neighbourhood counter into one of Kyushu's most acclaimed Edomae destinations. His work earned La Liste recognition by 2025, with an omakase of nineteen seasonal sushi courses drawing on the finest Kyushu and Tsukiji produce.
