About Willem Hiele
Self-taught chef Willem Hiele grew up in Ostend, deeply connected to the North Sea and Belgian coast. He opened his restaurant in a brutalist 1971 building by architect Jacques Moeschal in the De Keignaert polder nature reserve. His cooking is driven by spontaneity, the sea, and the rhythm of nature.
