About Valéry Mathis

Trained under Haeberlin, Troisgros, and Chibois — three pillars of French haute cuisine. Brought to Frankfurt by owner Eric Huber in 1995. Has maintained the Michelin star since 1998 (25+ years). Fish is the house speciality, often flown in directly from France.
