About Valentina Giacobbe

Of Italian origin, Valentina Giacobbe grew up across Asia — Japan, South Korea, and the Philippines — before training under Pierre Gagnaire (3 Michelin stars) and Christophe Saintagne. She then helped open Rozó with Diego Delbecq, contributing to its first star. She opened Ginko in September 2023 and was doubly honoured in March 2025 with Ginko's first Michelin star and the Michelin Young Chef Prize. Her partner Julien Ingaud-Jaubert, formerly of Clarance Hôtel, serves as pastry chef.
