Previously: Senior Sous Chef at Brae; Chef de Partie at Royal Mail Hotel. Mentored by Dan Hunter. Tobin Kent trained under Dan Hunter at Brae and at the Royal Mail Hotel in Dunkeld. Opened Moonah to showcase hyper-regional ingredients from the Bellarine Peninsula. All produce comes from within 200km: local producers, his kitchen garden, or foraged. Winner of Victorian Restaurant of the Year 2025.
