Théo Fernandez and Claire Cames, both 28, accumulated experience at Shangri-La, Le Meurice, Le Ritz, Gabriel, and Christophe Bacquié before returning to the Southwest. Claire was Cédric Grolet's first pastry apprentice at Le Meurice. They earned a Michelin star in 2025 and hold 13.5/20 Gault & Millau and 2 Toques Vertes from Tables & Auberges de France.
