About Tatsuki Mishima
Tatsuki Mishima was born in 1982 in Izumo City, Shimane Prefecture, and worked as a designer at a machine manufacturer before changing careers into cooking at age 25. He trained at Japanese restaurants in Shimane and Tokyo before opening Japanese Cuisine Kakujyu in Tsurumi, Yokohama in 2016 as its owner-chef. In 2023 he opened Higashiyama Muku in Nakameguro, bringing a personal interpretation of seasonal Japanese cuisine shaped by his Shimane origins.
