About Tadashi Sano

At 23, joined a local izakaya in Tokyo where he discovered the joy of cooking. Six years later, committed to sushi by apprenticing at Tsukiji Aozora Sandaime, spending two years at the main store before becoming head chef at the Marunouchi branch. Started later than peers but made up for it by practicing at home after shifts. Opened his own sushi bar eight years after beginning his apprenticeship.
