About Sylvain Joffre
Sylvain Joffre, originally from Aveyron, trained under Michel Bras before establishing En Pleine Nature in Quint-Fonsegrives in 2011. A true cuisinier-jardinier-cueilleur (cook-gardener-forager), he earned his first Michelin star in 2014 and the Michelin Green Star for sustainable gastronomy in 2024. Also holds 15/20 Gault & Millau.
