Self-taught Italian chef. Co-founded Acquerello with Giancarlo Paterlini in 1989. Continuously Michelin-starred since 2007. Known for classic Italian preparations with refined technique. Champion of aged Carnaroli rice from Rondolino family. Pioneer of Italian fine dining in San Francisco.
