Chef Shinsuke Ishii served as sous chef at Fish Bank Tokyo for two years, then worked as head chef at Restaurant Bacar for seven years starting in 2008. In April 2016, he opened Sincère. He is a passionate advocate for sustainability, speaking at seminars about underused fish species.
