About Senio Venturi
Chef Senio Venturi's culinary philosophy is a profound homage to the great Tuscan tradition, expressed through a language that is both comprehensible and distinctly unique. He and his wife Elisa have cultivated L'Asinello as a declaration of love and respect for these traditions, consciously choosing to operate in the province to remain less tethered to fleeting culinary trends, allowing their cuisine to express itself in its purest form. At the heart of Venturi’s ethos is a meticulous dedication to sourcing, prioritizing raw materials from small, local producers in the Chianti area. This commitment extends to the curated wine list, which focuses on Tuscan labels designed to perfectly complement the regional dishes. His overarching vision is to offer an "authorial cuisine" in a rural setting, interpreting the territory with taste and wisdom, creating an experience where guests can relax, feel good, and reconnect with a slower, more intimate, and familiar dimension of dining. Chef Venturi exhibits a mastery of technical style deeply rooted in Italy's culinary past, specifically "cotture legate al passato" (cookings linked to the past). A hallmark of his method is the extensive use of an internal fireplace for grilling over embers – a technique he has employed steadfastly since L'Asinello's inception, imbuing his dishes with profound, smoky depths of flavor. His approach to flavor and plating balances traditional understanding with a unique, refined touch, ensuring each dish is both approachable and distinctive, a narrative interpretation of the Tuscan landscape. Among his legendary signature dishes that showcase this artistry are the Juniper-smoked tartare with cherry sauce and Parmesan mousse; Steamed ravioli with grilled capocollo, asparagus cream, and pork popcorn; Nettle gnocchetti with game stock, braised wild boar, and seasonal mushrooms; Carnaroli rice with almonds and pheasant; Quail stuffed with foie gras, served with loquat and snow pea macedonia; and Pigeon in casserole with dates and cocoa. His dessert creations also reveal innovative flair, such as the Coffee sphere with blancmange and whisky granita, and the Zuppa Inglese with hazelnuts and sage.
