From Nagasaki, Japan. Previously led Shoun RyuGin Taipei (2 Michelin stars) from 2014-2022. Trained under master chef Seiji Yamamoto at 3-star Ryugin Tokyo. Staged at Benu and Manresa in San Francisco. Opened Eika in 2024 after 10 years in Taiwan.
