Taiwanese-born chef trained at Noma Copenhagen and Quay Sydney. Co-founded MUME in 2014 with Kai Ward (also Quay alumnus) and Long Xiong (Per Se). Pioneer of Nordic-Taiwanese fusion. Led MUME to Asia's 50 Best #7 (2019) and Michelin star. Flor de Caña Sustainable Restaurant Award recipient.
