Born in Leiden, grew up in Soest. Started as dishwasher while studying economics, realized cooking was more interesting. Trained in Gstaad, Switzerland mastering classic French technique. Gault&Millau Chef of the Year 2014. Bord'Eau earned 2 stars by 2014. Pioneered counter-seating fine dining in Netherlands with Restaurant 212 (2018). Also operates Table 65 Singapore (1 star), De Juwelier (1 star), and Bistro de la Mer. Known for precise French technique with Japanese influences, exceptional seafood, innovative sauces, and theatrical presentations.
