About Pascal Bastian
Pascal Bastian helms the Auberge du Cheval Blanc in Lembach — a historic 18th-century coaching inn (1822) in the Northern Vosges, near the German border. The restaurant holds 2 Michelin stars, making it one of the northernmost 2-star addresses in Alsace. Bastian's wife Carole manages the front of house. His cuisine is creative Alsatian rooted in the finest local produce: wild snails from Goersdorf, local Alsatian beef marinated in lovage, organic corn, and game from the surrounding Northern Vosges Regional Nature Park. The tasting menu ranges from €42 to €190, and his langoustine tartare with mustard ice cream, and Madame Burgaud's Challans duck with wild mushrooms, are among the most praised dishes.
