Chef Olivier Fugot brings the 400+ year legacy of Tour d'Argent to Tokyo, having served as Chef de Cuisine at the legendary Parisian institution. Trained under the mentorship of Eric Frechon, he honed his skills as Sous Chef at Le Bristol Paris. He maintains the legendary pressed duck tradition while thoughtfully adapting to Japanese sensibilities.
