Michio Kojima

Trained for nine years at Ginza Kyubey, then helped launch Sushi Kanesaka inside Palace Hotel Tokyo. Served as head chef at Sushi Kanesaka for four years before opening his own restaurant in 2016, relocating to current Ginza location in November 2019.
