Merijn van Berlo

Born 1978. Opened successful pop-ups Repéré and Foyer in Amsterdam 2014 with partner Figo van Onna (sommelier). Launched Choux 2015 in former tin factory/gin distillery near Amsterdam Central. Won Gault&Millau Best Vegetable Restaurant Award 2022. Co-founder of 621ferments (fermentation project). Philosophy: sustainable gastronomy through creativity. 90% vegetables/fruit, 10% meat/shellfish focus. Natural wines from sister company Zuiver Wijnen.
