About Matteo Baronetto
Born in Turin. Protégé of Gualtiero Marchesi, former sous chef to Carlo Cracco at Ristorante Cracco (Milan). Returned to Turin to lead Del Cambio in 2014, earning a Michelin star within a year. His philosophy of 'rationalized improvisation' honours regional heritage while pushing creative boundaries. In early 2025, Diego Giglio (longtime sous chef) took over day-to-day leadership.
