About Masashi Maeda
Spent 12 years honing skills in the Kansai region, including training at the renowned Kyoto ryokan Sumiyasou. Established himself in Shizuoka before relocating to Ginza. Named his restaurant after the Zen phrase 'Matsu Kotobuki Sennen no Midori' (The Evergreen Pine, Thousand Years of Green).
