About Ken Chan

Born in Hong Kong, dropped out of school at age 12 to work in kitchens, started by pushing dim sum trolleys at Jumbo Kingdom restaurant. Head chef at vegetarian restaurant by 19. Moved to Taiwan 30+ years ago, joined Le Palais in 2010 as Executive Chef. Known for exceptional wok skills and creativity with unusual ingredients.
