Keisuke Mifune

Keisuke Mifune opened Yugen in 2019 and earned two Michelin stars with a kaiseki program inspired by the tea-ceremony spirit. Working from a small counter and private room in Tennoji-ku, he composes ritualized, seasonally led tasting menus that emphasize restraint, texture and quiet formality.
