Chef Kaneko Masataka represents the fifth generation at Nodaiwa Honten, carrying forward over 150 years of unagi tradition. Trained under the guidance of the Nodaiwa founding family, he has dedicated his career to mastering the art of eel preparation. He specializes in wild-caught eel when available, honoring the traditional techniques passed down through generations.
