Half-Korean heritage — 'Jae' combines the J from Jörg and his Korean mother's name Ae. Trained at Ringhotel Eggert in Münster. Worked at 3-star Vendôme near Cologne. Sous chef at Victorian, Monkeys, and Nagaya in Düsseldorf. Led Agata's to its first Michelin star as head chef. Opened own restaurant 2020 after creative break. Elevated European cuisine meets Korean culinary worlds.
