Now, it's "more about the ingredient, about where things come from, about having a clearer discourse," albeit still within his distinctive, avant-garde style. He views the long tasting menu, such as Le Chique's 27-course offering, as the optimal medium for "storytelling," presenting sequences of dishes that build a narrative rather than just a meal. Ingredient sourcing and regional focus have also evolved significantly. Previously, his menus aimed to represent all 32 states of Mexico. Today, he channels his efforts into the rich biodiversity of the Yucatán Peninsula, believing it offers "incredible richness" and endemic ingredients that clearly reflect his immediate surroundings. This regional deep dive allows for greater personal expression and a clearer discourse around Mexican flavors, demystifying the cuisine for a global audience.
