About Jean-Paul Acker

Jean-Paul Acker was born in 1992 in Colmar. He trained at La Cheneaudière from 2011, then refined his craft at L'Oustau de Baumanière under Glenn Viel — the three-star Provençal address that earned its third star while Acker was there in 2020. He returned to La Cheneaudière in spring 2021, and in March 2025 became the first Michelin star recipient at Le Feuillage — the gastronomic restaurant within the 5-star Relais & Châteaux hotel. Gault & Millau named him 'Grand de Demain' (Next Big Thing) in 2025. His philosophy: 'the taste of tradition with modern plating and cooking techniques', with Alsatian terroir, local producers, and seasonal vegetables at the core.
