Hitoshi Takahata

Hitoshi Takahata trained for 15 years at Ajikitcho and has led Taian to three Michelin stars since 2011. He composes intimate kaiseki focused on charcoal grilling, elevating seasonal ingredients through restrained seasoning and precise fire control at a small counter-focused Nagahoribashi dining room.
