Hideyuki Shibata

Hideyuki Shibata built a decade-long reputation at La Clairière in Shirokane, where he held one Michelin star for six consecutive years and ranked among Tokyo's top French restaurants on Tabelog. In June 2025 he relocated to Minami-Aoyama to open mærge — a modern French restaurant exploring the intersection of culinary traditions — which earned a Michelin star in the 2026 Guide Tokyo in its debut year.
