About Giorgio Damini
The Damini family has been butchering in the Vicentino hills since the 1920s. Giorgio transformed the shop into a hybrid butcher-restaurant where guests sit among the hanging meats and cured products and eat dishes built entirely around the art of the Italian macelleria. Unique in the world of Michelin-starred dining.
Giorgio Damini is a fourth-generation artisan butcher-chef who transformed the Damini family butcher shop in Arzignano (Vicenza) into the first and only butcher-restaurant in Europe to earn a Michelin star (2015). His cuisine centers on Italian meat traditions — aging, curing, and cooking — elevated to fine-dining precision.
