Giancarlo Perbellini, born 1964 in Bovolone (Verona), comes from a pastry-making dynasty tracing back to 1890. He trained with the great masters of Italian and French cuisine before returning to Verona to open Casa Perbellini, awarded three Michelin stars in 2021. His approach balances classical technique with lyrical Veronese ingredients.
