Born 1965, Rivoli (Turin). Opened Combal in Almese at 28, relocated to Castello di Rivoli as Combal.Zero (2002) earning two Michelin stars. Named by Time as 'one of ten chefs who can change your life' (2013) and by Forbes among 100 most influential people (2014). Joined Carignano at Grand Hotel Sitea in 2022 after Combal.Zero's closure.
