At Château de Beaulieu, he has expanded the existing 6 hectares of land by purchasing an additional 2.5 hectares, dedicating them to extensive cultivation. This includes 2 hectares of vegetable gardens, 50 ares of orchards, a small farm with permaculture, a citrus conservatory, and even housing rescued animals. Currently achieving 30% autonomy, he aims for an impressive 70% in the near future, supported by three full-time gardeners practicing integrated farming methods. This allows him to feature ingredients from the Hauts-de-France region, but more importantly, a significant portion comes from his own cultivations—vegetables, fruits, and aromatic herbs grown with respect for the environment. Dufossé's overarching vision is to 'capture the very essence of nature' by starting from a 'living terroir' and crafting dishes 'filled with energy and wonder.' He is committed to sourcing 90% of his remaining needs from local producers, ensuring freshness and supporting the regional ecosystem. This holistic approach, from soil to plate, defines his authoritative and deeply personal culinary signature.
