About Chef Uezu

Trained under Yoshihiro Murata at Kikunoi Tokyo for 16 years before taking the helm in 2017. Opened Yakumo Uezu in February 2021. Born in Okinawa, he integrates his heritage through ingredients like Miyako miso and brown sugar. Adopts Western ingredients such as caviar and truffles while maintaining Kyoto kaiseki foundations.
