Chef Kin-san honed his sushi technique at Michelin-starred Ginza-Iwa in Tokyo and Sushi Wadatsumi in Hong Kong before opening Sushi Takeshi. Known for his signature Yamagata shari and dual vinegar blending approach, he brings precision and deep understanding of Edomae tradition to each omakase course.
