Ángel León

Known as the Chef del Mar (Chef of the Sea), Ángel León is a marine gastronomy pioneer who invented edible bioluminescent plankton, sea grain from eelgrass (Zostera marina), and marine charcuterie. He transformed a historic tidal mill in Cádiz Bay into one of Spain's most visionary restaurants.
